Step 1
Create bed of lettuce. Add quinoa, tomatoes, chickpeas, onion, and cucumber to a bowl and toss. Juice one lemon over top, adding 2 tbs balsamic glaze and olive oil to taste. Crumble feta overtop and enjoy.
