Armenian Red Lentil Soup

Instructions
Step 1
Heat olive oil in saucepan.
Step 2
Finely chop onion, put in. Lightly chop apricots, put in. Cook gently at medium heat (halfway) for 10 minutes, stirring occasionally.
Step 3
While this is cooking, rinse red lentils several times.
Step 4
Once onion is soft, put lentils in saucepan and add stock and enough water to generously cover lentils.
Step 5
Simmer for 30 minutes.
Step 6
Put in chopped tomatoes. Add cumin, thyme, salt, pepper. Taste to check.
Step 7
Whiz up with stick blender.
