Orange Walnut Coffee Cake

1 cuppitted whole dates
1 tspvanilla extract
1 teaspoonground cinnamon

¼ cupfresh orange juice

⅔ cuplight brown sugar

⅔ cupevoo

½ cupfresh orange juice
1 teaspoonvanilla extract

½ cupchopped walnuts
¼ cup2% reduced fat Greek yogurt
plain
2 Tbsppowdered sugar
½ teaspoonorange zest
1 tablespoonfresh orange juice
Instructions
Step 1
Prepare the filling: place dates in a small bowl. Add hot water to cover. Let stand until softened, about 30 minutes. Drain
Step 2
Place strained dates, 1 teaspoon vanilla, 1 teaspoon cinnamon and 1/8 teaspoon salt in a food processor. with processor running, add 1/4 cup orange juice, one tablespoon at a time until smooth
Step 3
Prepare the cake: preheat the oven to 350°
Step 4
Stir together flour, baking powder, baking soda, 1/2 teaspoon cinnamon cardamom, 1/4 tsp salt in a medium bowl
Step 5
Stir together 2/3 cup yogurt, brown sugar, oil, eggs, 1 tablespoon zest, 1/2 cup juice, and 1 teaspoon vanilla in a separate bowl
Step 6
Stir yogurt mixture into flour mixture
Step 7
Coat a 12-cup bundt pan with cooking spray.
Step 8
Set aside 1 1/2 cups batter. Pour remaining batter into prepared pan. Spoon filling over batter. Use the back of a spoon to spread evenly. sprinkle walnuts overdate mixture. Pour remaining batter over the walnuts
Step 9
Bake until a toothpick inserted in the center comes out clean, about 30 minutes. Cool in pan on a wire rack for 10 minutes. Invert cake onto rack and cool completely
Step 10
Prepare the glaze: whisk together 1/4 cup yogurt, powdered sugar, 1/2 tsp, and 1 tbsp juice and a medium bowl and spread over cake
