Step 1
Halve, peel, finely chop onion until you have 1.5 cups. Drain beans over a small bowl reserving liquid. Heat large drizzle of oil in a large pot over medium high heat. Add onion and stir until softened 3-4 mins. Add southwest spice and cook 30 secs. Stir in tomato paste and Tex mex paste and cook 1 min. Stir in 3 cups water and 1/2 cup bean liquid. Bring to boil and cook stirring occasionally 5-8 mins. Season with salt and pepper. Turn off heat. Crush a few tortillas. Divide soup between bowls and top with tortillas, white cheddar, and Smokey red pepper crema.
