Cheddar Ranch Chicken & Potatoes

Ingredients
4 servings
4 cupsbroccoli
raw
20 ozbaby red potatoes
raw
salt
6 ozchicken breast
cooked and shredded
1 Tbspbutter
1 TbspPower Cakes
1 cupalmond milk
unsweetened
2 tspRanch DIPS powder
1 cupcheddar cheese shredded

Instructions
Step 1
Preheat oven to 400 degrees. Chop broccoli and place on a baking sheet lined with parchment paper. Spray tops with cooking spray and sprinkle with sea salt. Roast in the oven for 20 minutes. Remove from oven and let cool.
Step 2
Bring a large pot of water to a boil. Add potatoes and sea salt, then boil for 15-20 minutes or until fork tender. Drain. Smash lightly & set aside.

Cook and shred chicken

Add pot back to stove over medium heat and add butter. Stir until melted, then stir in Kodiak mix. Once combined, add in milk, ranch powder and a dash of salt + pepper. Bring to a boil then let simmer on medium for 5 minutes. Fold in the shredded chicken, roasted broccoli, smashed potatoes and ½ cup of cheese.
Step 5
Transfer to a greased baking dish and top with the remaining cheese. Bake for 10-15 minutes or until cheese is melted. Divide casserole into 4 servings and top each serving with 1 Tbs. Greek yogurt and sliced green onions. Enjoy
