Instructions

Step 1
Fry the aubergine in olive oil, making sure all sides of the cubes are coated.
Step 2
Add the onion, frying until golden brown. When these are almost done, add the garlic, being careful not to burn it.
Step 3
Add the tomatoes, balsamic vinegar and basil stalks, seasoning with salt and pepper to taste. Add chilli flakes for heat if desired.
Step 4
Simmer for 10-15 minutes to reduce the sauce.
Step 5
Meanwhile, cook the pasta in salted water to al dente. Save some pasta water.
Step 6
When the sauce is sufficiently reduced, add the cream, simmer for a couple of minutes, and stir in with the pasta.
Step 7
Tear the mozzarella and throw it in, along with the basil leaves, and serve.
