Ingredients

1 lbpork roast
1brown onion
diced
28 ozred enchilada sauce
can, spiciness to your preference
1 cupbrown rice
cooked
15 ozblack beans
or beans of choice
8flour tortillas
1 cupshredded cheese
any flavor

Instructions
Step 1
Cook pork, onion and enchilada sauce in the slow cooker on low for about 7 hours. Once cooked pull out pork with a slotted spoon and shred. (use a hand mixer for fast shredding)
Step 2
Warm the tortillas and fill with meat, a little bit of juice, rice & beans. (add any other fillings you like) Roll burrito and place on oven safe dish.
Step 3
Top with more juices and bake covered at 350⁰ for 30 minutes. Uncover then top with cheese and continue to bake until cheese has melted.
Step 4
Add more juice if needed and top with lettuce tomato avocado.
