Instructions

Step 1
Wash all fresh produce
Step 2
Chop celery, carrots, bell peppers, garlic, onion, and finally chicken breast
Step 3
Add chopped chicken to pot with olive oil, salt, and pepper to taste. Squeeze lemon juice over chicken and cook chicken about 7-10 minutes stirring occasionally.
Step 4
Add onion and garlic, cook til onion is translucent and garlic is fragrant
Step 5
Add chopped bell peppers, celery, and carrots. Allow to “sweat” about 10 minutes…stirring occasionally, with lid.
Step 6
Add chicken broth, quinoa, and water to level appreciated. Add rosemary and thyme. Add Himalayan salt to taste. Bring to a boil, then simmer with lid for 15 minutes.
Step 7
Ready to serve: season to taste, add cheese or naked. Voila
