Claudia’s Hollandaise Sauce

Instructions

Step 1
In 4-cup glass measure, cook butter on HI (max. power) 1 minute, or until butter is melted.
Step 2
Add remaining ingredients.
Step 3
Beat with electric mixer or wire whisk until smooth.
Step 4
Cook on 70 % power (roast) 1 minute, beating well with whisk every 15 seconds until thickened.
Step 5
Remove from microwave oven and beat with hand blender or wire whisk until light and smooth.
Step 6
Serve immediately with cooked asparagus, broccoli, or Eggs Benedict (page 123).
Step 7
If sauce curdles, beat in 1 teaspoon hot water and continue beating until mixture is smooth.
Step 8
To reheat Hollandaise, heat on 20 (low) 15 to 30 seconds, stir, let stand 1 minute, and repeat until hot.
Step 9
*** Double this recipe. Add more lemon and salt.
