Instructions

Step 1
1. Boil tomatoes, guajillo chiles, garlic cloves, chiles de árbol and 1/4 of the onion until the tomatoes have blistered.
Step 2
2. Once done, blend the boiled vegetables with 2 tbsp salt. Put to the side.
Step 3
3. Add 24 ounces (1.5 LB) nopales, 1/4 white onion, 3 garlic cloves, tomatillo peels, and 1 tbsp salt to a pan.
Step 4
4. Cook for 10-13 minutes, stirring often. The nopales will release “baba” (slime) as they cook. Turn off the heat when they have changed to a dark green color.
Step 5
5. Remove the onion, garlic, and peels. Rinse the nopales under cold water until there is no “baba.” Put to the side.
Step 6
6. Chop the remaining onion. Chop the chicken into strips.
Step 7
7. In a greased pan,cook the chicken for 4 minutes or until golden brown.
Step 8
8. Add in the onion and cook for 4 additional minutes.
Step 9
9. Add in the corn and cook for 3 minutes.
Step 10
10. Add in nopales and salsa. Combine well.
Step 11
11. Cover and cook for an additional 10 minutes on low.
Step 12
12. Add in any seasonings of choice and cilantro.
Step 13
13. Mix well and divide into 4 servings. Each serving will be about 2 cups of chicken mixture.
