Instructions
Step 1
Preheat the oven to 200°C (fan 180°C/gas mark 6) and spray a baking tray with low-calorie cooking spray. Combine the meatball ingredients in a mixing bowl, then take small amounts of the mixture in your hands and roll into twenty even-sized meatballs. Place the balls on the
greased baking tray and bake in the oven for 15 minutes diced until they are slightly browned.
Step 2
While the meatballs are cooking, spray a frying pan with low-calorie cooking spray and place over a medium heat.
Add the diced peppers and cook for 3 minutes until they begin to soften, then add the fresh garlic and ginger and cook for a further 2 minutes.
Step 3
Combine the rest of the sauce ingredients in a small bowl and add to the pan with the peppers. Reduce the heat to low and simmer for 5 minutes until the sauce is starting
to thicken. Add the baked meatballs to the pan and continue to heat for 5 minutes until the sauce is thickened and the meatballs are coated.
Serve sprinkled with sliced spring onion and your choice of accompaniment.
