For the ribs
3short ribs
1Onion
sliced
5 clovesGarlic

2Shallots
sliced
1Carrot
diced
1Celery
diced
1 TbspTomato paste
½ cupRed wine
3 sprigsThyme
2 sprigsRosemary
1Bay leaf
Chicken stock
enough to cover

Instructions
Short rib
Step 1
-season the short ribs with salt
Step 2
sear on all sides
until browned
Step 3
Remove the meat
Step 4
-add the carrots, celery, onion, shallots, garlic,

Let them brown for 2min before stirring

When soft,add tomatoes paste
Step 7
Add red wine, reduce.
Step 8
Add short ribs

back in, cover with stock.

Bring to simmer,

rosemary, thyme, bay leat.

Braise for 3-4h

-once ready, remove meat and strain liquid.

And continually baste until desired sauce consistency

-preheat oven to 400F. Wrap potatoes in foil, and

bake for 1 hour, until soft. Peel skins off then rice.
