Step 1
Preheat the oven to 220C. Clean the fish and slice it lengthwise, removing with a tweezer the bones

Chop finely the bell pepper, dill, and olives. It’s preferable to use deveined, peeled mini shrimp, but as for larger shrimp, do slice it in half lengthwise. Slice the cheese into thin, long strips.
Step 3
Lay the fish fillet onto a large sheet of foil. Season with salt, pepper, and dill. Lay the cheese slices, then the olives & bell peppers, and the shrimp. Repeat in reverse, finally covering with the second fillet.
Step 4
Make a tight burrito-like roll with the foil and twist it’s ends.
Step 5
Bake for 40’
