½ cuprice vinegar

¼ cupwater

¼ cupwhite sugar

¼ cupcarrots
matchstick

¼ cupradishes
peeled and cut into matchsticks

¼ cupwhite onion
thinly sliced

1rotisserie chicken
meat removed and shredded

2french baguettes

4 tablespoonsmayonnaise

sriracha
to taste

¼ cupcucumber
thinly sliced

1 tablespoonfresh cilantro leaves

2jalapeno pepper
small, sliced in rounds, divided

1lime wedge

frozen french fries

Instructions
Step 1
Preheat the oven for the frozen french fries. Follow package instructions to prepare the fries.

Step 2
Prepare carrots, radishes, onion, and 1 jalapeno for the quick pickle.




Step 3
Place rice vinegar, water, and sugar into a saucepan over medium heat, bring to a boil, and stir until the sugar has dissolved (1 min). Allow mixture to cool



Step 4
Pour the cooled vinegar mixture over the carrot, radish, and onion in a bowl, and allow to stand for at least 30 minutes. Drain off the excess vinegar mixture after the vegetables have pickled.
Step 5
While the vegetables are pickling, prepare the rotisserie chicken. Mix the mayonnaise with sriracha in a small bowl. Steam the broccoli.




Step 6
Slice the baguettes in half the long way, and pull the center of the bread out of the baguette halves, leaving a cavity for the filling. Place the baguette halves under the broiler to lightly toast, 2 to 3 minutes.

Step 7
To assemble the bahn mi sandwich, spread each half of the toasted baguette with spicy mayonnaise, and fill the cavity of the bottom half of the bread with shredded chicken, cucumber slices, pickled carrot, onion, and radish, cilantro leaves, and jalapeno pepper. Squeeze a wedge of lime over the filling, and top with the other half of the baguette.
