Instructions

Step 1
Preheat oven to 180ºC
OvenOvenPreheat
Step 2
Allow your pastry sheets to thaw for 10-15 mins, meanwhile mi all cinnamon filling ingredients in a bowl to form a lumpy paste.
Step 3
Cut each puff pastry sheet into 6 rectangles, leaving the plastic backing on for easy handling.
Step 4
Separate your rectangles and spread about 1/2-1 tbsp cinnamon filling ir strawberry jam in the centre of half the pastry rectangles, leaving a border around the edges.
Step 5
Peel the packing off the other half of the pastry rectangles and close all your pop-tarts up, sealing around the border. Then use a fork to crimp the edges. Pierce the top with a few fork pricks to allow steam to escape.
Step 6
Brush generously with melted butter and bake for 20 minutes or until golden. Cinnamon filling may ooze out which is totally normal. Allow to cool.
Step 7
Make your icing in while the poptarts bake, mixing together all the icing ingredients in a bowl. It should be slightly thicker and textured when you mix it but settle so it looks smooth after a minute. Add 1/2 tsp of plant milk at a time to adjust the thickness if you need.
Step 8
Carefully spread the top of your tarts with the icing and immediately sprinkle on some sprinkles!
