Pork, Apple & Blue Cheese Burgers

Instructions

Step 1
Heat the oven to 190°C. Slice the potatoes into chips or wedges, then tip onto a baking tray, drizzle with a teaspoon of olive oil and a little salt and pepper. Bake for 25- 30 minutes until crisp and golden. Turning half way through.
Step 2
Slice the apple in half and remove the core and seeds, then peel and slice the onion in half. Using a grater grate one half of the onion and one half of the apple. Slice the remaining half of the onion into strips and finely slice the other half of the apple.
Step 3
Heat a tablespoon of oil in a non stick frying pan and cook the onion strips until soft and they are starting to caramelise. Remove from the pan and set aside.
Step 4
Tip the pork mince into a bowl, add the dried herbs, the grated apple and grated onion. Mix all this together until well combined.
Step 5
Form your burger patties and fry in the same pan the onions were cooked in for about 8-10 minutes on each side until the burgers are cooked through.
Step 6
Place the sliced apple over the burgers and crumble over the blue cheese. Transfer the burgers to a baking tray and bake for a few minutes so the cheese melts.
Step 7
Toast the burger buns in a dry frying pan if you like. Assemble your burgers with the caramelised onions and rocket. Serve with the wedges. Enjoy!
