Instructions

Step 1
In a bowl place the pumpkin cubes and water, add the calcium hydroxide and mix well. Let the pumpkin soak for 2 to 3 hours. This step is essential to get that lime in the cubes.
Step 2
After soaking time, drain the liquids, put water in the basin and drain again. Then take one cube at a time under running water to remove any remaining lime.
Step 3
Using a fork, pierce one or two sides of each cube, so the syrup will penetrate during cooking.
Step 4
Now put the water in a pan, take it to the fire and add the sugar, cinnamon and cloves and boil until the syrup starts to turn slightly yellow.
Step 5
Place the pumpkin cubes and start cooking on the lowest possible heat, with the pan covered. Stir occasionally during cooking, but be careful not to break the cubes.
Step 6
Cook until the cubes are soft and the syrup is well reduced. This process takes approximately one hour.
Step 7
Depending on the cooking conditions and liquids in the pumpkin, you may need to add a little water during cooking. If the syrup starts to thicken too much, add water little by little.
Step 8
Turn off the heat, let the pumpkin to rest in the pan until it cools completely and then store it in the fridge.
