Instructions
Step 1
Mix all dry ingredients (including all bran) in a large bowl
Step 2
Beat eggs, melted butter, buttermilk and oil together.
Step 3
Make a well in the centre of the dry ingredients and add beaten egg mix (this is where you add the raisins).
Step 4
Knead into a soft dough.
Step 5
Place into a greased deep roasting pan pushing dough flat into the sides and corners till all flat and smooth.
Step 6
Bake at 180 for 50 minutes to 1 hour.
Step 7
Remove and leave to cool for a little before removing from pan and cutting into squares.
Step 8
Return separated rusks into oven having reduced the oven temperature to 100.
Step 9
Leave in oven for 4 hours.
