Instructions
Step 1
Boil pasta until done and drain but reserve 2 cups of pasta water
Step 2
Heat olive oil and brown chicken thighs with 1/2 salt & pepper
Step 3
Remove chicken and add butter, onions and mushrooms and garlic and cook for 5 to 8 minutes until soft.
Step 4
Add browned chicken and noodles, Parmesan, parsley, salt & pepper and approx one cup of half & half to pan and cook until cheese melts, if a little thick add a little pasta water and stir until desired thickness
Step 5
Top with mozzarella , Parmesan and put under broiler for 2 to 3 minutes
