Instructions
Fajita Veggies
Step 1
Slice onions, peppers, & mushrooms.
Step 2
Heat pan over medium high heat (cast iron preferred)
Step 3
Add 1-2T Sunflower oil, depending upon pan. Coat entire bottom of pan with oil and heat for about 30-60 seconds.
Step 4
Add sliced veggies and cook until partially blackened - about 15-20 min.
Step 5
Set aside and keep warm.
For Seitan
Step 6
Slice Seitan strips in half
Step 7
In bag, mix chickpea flour and spices to taste. No more than 1 teaspoon of the spices and 1/8 teaspoon of salt and pepper. Shake bag.
Step 8
Add Seitan to bag and shake to coat.
Step 9
In hot pan, heat 1-2 T of sunflower oil over high heat. Fry Seitan pieces for 2 minutes each side (until crispy).
Step 10
Set aside over a paper towel and wipe down pan.
Honey Chipotle Sauce
Step 11
In small cuisinart, add chipotle and adobo sauce (about 1/3 of a can 2-3 chipotles), ketchup, honey, and spices to taste.

Blend together.
Step 13
Put cooked Seitan pieces and sauce back into pan, heat over low heat for about 1 minute. Use at least 1/2 of the sauce for coverage. The more used the hotter it will be.
Tacos
Step 14
In another pan, heat taco tortillas over medium heat about 30 seconds per side.
Step 15
Build the tacos with your preferred toppings. Cheese, avocado, salsa, sour cream, pickled jalapeños etc.
