BLACK BEAN QUESADILLAS

These black bean quesadillas are so delicious and nourishing. It’s one of our favourites and features a lot on our meal plans. I love to prepare the filling ahead and queso ahead of time. It makes it so easy to whip up a super quick and tasty lunch. What’s your favourite quesadilla filling?

Instructions

Step 1
Dice the red onion and capsicum
Step 2
To a pan on medium heat, add a little bit of olive oil and the onion, and cook for a couple of minutes until softened. Add the capsicum, corn, black beans and spices and cook for a further ⅔ minutes.
Step 3
Spread the cashew queso on half of a tortilla, add some of the black bean mix, and some spinach and top with more cashew queso. Fold the tortilla in half.
Step 4
Transfer to a non-stick pan heated on medium to low heat. You can brush up a bit of olive oil if needed. Cook for a couple of minutes until the tortillas get golden, and flip to the other side. Cook for a further couple of minutes.
Step 5
Slice in 2 or 3 pieces and top with avocado, jalapenos, coriander and cherry tomatoes.
