Instructions
Step 1
Add 2 Tbsp olive oil to a pan and sauté the pancetta until crispy. Set aside in a pan.
Step 2
Beat the eggs in a bowl. Add the milk, grated cheese, salt and pepper.
Step 3
Slice the ciabattas into 6 thick slices. Add the slices to the egg mixture to soak them through.
Step 4
Mash the avocados in a bowl. Drain the spinach and combine with the avocado. Add in 2 cloves of garlic and season generously with salt and pepper.
Step 5
Place the remaining 3 Tbsp oil in skillet and heat it over medium heat.
Step 6
Place the slices of bread in the oil. Cook about 3 minutes until golden. Turn and cook until the other side is golden as well. Set aside in pan with pancetta when done.
Step 7
Add the sugar, vinegar and chili flakes to a small saucepan or microwaveable bowl. Simmer until it forms a thick syrup.
Step 8
To serve, divide the mashed avocado to each plate. Top with 3 slices of toast each. Add the pancetta, and drizzle with syrup.
