Instructions
Step 1
Sprinkle beef with salt and pepper.
Step 2
Heat 1 tbsp oil in a large heavy based pot. Add the beef and brown on all sides on high heat. Set aside beef.
Step 3
If the pot is looking dry, add more oil. Add onion and garlic, cook for 2 minutes. Add finely chopped carrots and celery, cook for 6 minutes or until softened and sweet. Add carrot chunks and cook for 2 minutes.

Add flour and stir through.
Step 5
Add wine, beef stock, and stir to dissolve the flour.
Step 6
Add thyme and cooked beef. Turn heat up slightly, mix, bring to simmer, then cover. Adjust heat so it is simmering gently, not energetically.

Cook for 1 hr 45 minutes or until beef is tender.
Step 8
Meanwhile, cook bacon in a pan over high heat until golden. Remove and reserve bacon drippings in pan. Add butter and mushrooms. Cook over high until golden and crispy.
Step 9
Transfer mushrooms and bacon stew and simmer for 15 minutes, until mushroom are tender.
Baking
Step 10
Preheat oven to 200 degrees celsius fan forced.
Step 11
Pour stew into pie dish.
Step 12
Top pie with the puff pastry sheets, and brush with egg yolk. Cut a few slits into the surface and bake for 30 minutes until deep golden and piping hot.
Step 13
Rest for 5 minutes before serving.
