Instructions
Step 1
Cook the potatoes in boiling salted water for 10-15 minutes or until cooked through, then drain well.
Step 2
To Prepare the dressing, In a small bowl, add the crushed garlic, olive oil, lemon juice, honey, mustard, whole grain mustard, whisk to combine and season with salt and pepper.
Step 3
In a large bowl, pour half of the dressing directly over the hot potatoes, add the rocket and toss until the potatoes absorb the dressing and the Rocket starts to wilt.
Step 4
Season to taste with additional salt and pepper, give it a quick mix, sprinkle the Parmesan cheese on top, serve with the remaining dressing and Parmesan cheese on the side.
