GRIDDLED VEGETABLE COUSCOUS

This is a great recipe for when you have load of leftover veg. Just chuck them on a hot griddle pan until they have char marks. The couscous bulks out a few vegetables to create a delicious plate of food, and the feta is a lovely, decadent topping.

Instructions

Step 1
Preheat your griddle pan (or a frying pan) over a medium-high heat.
Step 2
Coat the vegetables in a splash of olive oil and sprinkle with a pinch each of salt and pepper and the oregano. Cook them on the hot pan for a couple of minutes on each side until nicely charred and tender.
Step 3
Dissolve the stock cube in the boiling water, then add the stock to the mug of couscous. Let it rest for about 5 minutes, then fluff the couscous with a fork and mix with the griddled veg. Top with the crumbled feta and serve.
