One-Pan Greek Chicken & Rice w/ Homemade Tzatziki

Instructions

CHICKEN & RICE

Step 1
Warm about a tablespoon of olive oil in a large skillet or wide sauce pan. Add chicken and cook thoroughly, until slightly golden. While the chicken is cooking, add the juice of half a lemon and 2 teaspoons of dried oregano.
Step 2
Remove chicken. Add about a tablespoon of butter to the same pan; next add rice, chicken broth and water. Cook until rice is soft.

Homemade Tzatziki

Step 3
Grate 2 cloves of garlic and about a quarter of a large cucumber into a small bowl. Add dill, greek yogurt, lemon and salt to taste.

Fresh Dressing

Step 4
Grate 1 clove of garlic into a small bowl. Mix together garlic, 1 tbsp olive oil, 1 tbsp red wine vinegar, 1 tsp dried oregano, 1 tsp honey and the juice of half a lemon. Add salt to taste.

Plating

Step 5
Plate rice, chicken, sliced tomato, sliced cucumber, sliced red onion, tzatziki, feta and add dressing on top.
