Step 1
Bring a pan of water to the boil and cook the rice according to the packet instructions
Step 2
Meanwhile heat the oil in a heavy-based frying pan over a high heat. Add the streak and sear for a couple of minutes until browned all over, remove from the pan with a slotted spoon and transfer to a plate.
Step 3
Add the onion, fry for 2-3 minutes until soft,
Step 4
then add the mushrooms and cook for a further 5 minutes
Step 5
Add the stock, bring to a simmer and cook gently for a couple of minutes
Step 6
Return the steak to the pan, bring back to a gentle simmer
Step 7
Remove from the heat and stir through the yogurt and mustards
Step 8
Spoon the beef over the rice and serve with the parsley.
