Instructions

Step 1
Heat a large, ovenproof skillet over medium heat. Add onion and garlic with a splash of oil, stirring occasionally.
Step 2
Add sausage and cook 3 mins or until lightly browned.
Step 3
Add 2 cups of chicken stock, rice, salt, and pepper and bring to a boil.
Step 4
Reduce heat to medium-low and cook 30 mins or until rice is almost tender.
Step 5
Stir in cauliflower. Cover and cook until cauliflower and rice are tender, about 5 mins.
Step 6
Preheat broiler to high.
Step 7
In a small bowl, whisk together remaining 1 cup stock and flour.
Step 8
Stir stock mixture into rice mixture. Increase heat to med-high and bring to a boil.
Step 9
Boil until the sauce thickens, about 2 mins.
Step 10
Sprinkle cheese over rice mixture. Broil until cheese melts, 1-2 mins.
Step 11
Garnish with parsley.
