Instructions

Lemon curd

In a pot put the zest and juice of the lemons

In a bowl, beat the eggs

Add the sugar and the butter and whisk well

Add the cornstarch

Add this mixture to the pot

While whisking, heat the mixture (medium heat)

When it gets creamy pour it in a jar

Wait until it cools completely before closing the jar

(Refrigerate up to 15 days)

Cookies

Preheat oven at 180°C

Mix the butter and the sugar until creamy consistency

Add the egg and lemon zest

Stir in the flour

Roll out the dough and cut the cookies using the cookie cutter of your choice - cut out the centre of half of the cookies

Transfer the cookies onto a baking sheet lined with parchment paper

Bake at 180°C for 10 minutes

Let the cookies sit on the baking sheet for 5 minutes before transferring them on a wire rack to cool completely

Pour a little bit of lemon curd over the full cookies and spread it
