📚Very similar to the recipe in my cookbook on page 64
Serves 6-8, lettuce cups
Spicy Sauce:
3 tbsp soy sauce
1 tbsp sesame oil
1 tsp rice vinegar
2 tsp brown sugar
1 tbsp peanut butter
2 tsp chili paste
1 tbsp fresh ginger, grated
Lettuce Cups:
280g block of tofu, cubed
150g brown rice noodles
Cashews, chopped
Sesame seeds
Cucumber, thinly sliced
Spring onions, thinly sliced
1/2 Lime, juiced
Break noodles in half and soak for 30 minutes in cold water.
Blend all the sauce ingredients until smooth and creamy
Press tofu with a tea towel to remove excess water. Stir-fry tofu until golden brown for 10 minutes on medium high heat.
Reduce heat, add the noodles and stir in the spicy sauce for 2-3 minutes.
Assemble your lettuce cups and enjoy.
