Instructions
Step 1
Mix the dry ingredients in a bowl.
Step 2
In a sauce pan, heat water until simmering. Then add the butter. Mix until butter has melted, then remove from heat.
Step 3
Add the liquid mix to the bowl of dry ingredients and quickly mix together with a spatula.
Step 4
Once the dry ingredients have absorbed the liquid, hand knead the dough. CAREFUL WITH THE HOT DOUGH. If dough is too hot to touch, continue with spatula. If ingredients are too dry, add half a tbsp of water and continue to knead.
Step 5
Once the dough is well kneaded (manageable and not sticky), cover the dough with a cloth and let it rest for 10 minutes.
Step 6
After 10 minutes, place dough on a working surface and knead again a few times.
Step 7
Once the dough is ready, create small balls of the dough that are about 55g each (or as big as desired). Using your hand or a hard flat surface, roll into smooth spheres.
Step 8
Cover the chunks of dough with plastic wrap on a flat surface and let it rest for 10 minutes.
Step 9
Heat up a flat pan at low to medium heat. After the 10 minutes of resting, flour a surface to roll and extend the dough into a flat circular shape. Thickness should be about 3mm.
Step 10
Once dough is rolled out, place the raw tortilla on the hot pan and let it cook for 20 to 30 seconds on one side. Then flip and cook for another 20 to 30 seconds. On the third flip, the tortilla should inflate. If it doesn't, ensure both sides are thoroughly cooked before removing it from the pan.
Step 11
Once all tortillas are made, you can store up to one week in the refrigerator. Ensure you cover the tortillas in a cloth and place it in a plastic bag.
