Instructions

Step 1
Sauté the pepper(s) and onions until translucent

Add minced/diced garlic
Step 3
Add tomato purée and chilli flakes
Step 4
Add 1 teaspoon of Italian seasoning, smoked paprika, ground ginger and cumin

Add chopped tomatoes
Step 6
Add salt and pepper to taste

Bring to a boil
Step 8
Add eggs and poach for 5-10 mins depending on doneness of eggs
Step 9
Remove lid and add feta cheese and pesto if using and Keane to marinate for a couple of minutes
Step 10
Add coriander and parsley to serve
