Step 1
Clean and wash the red peppers before to cut them in small cubes. Prepare the onions too, chop them and put them aside while preparing the other ingredients.

Warm up a couple of spoon of olive oil in a large pan and brown the onion. After few minutes, add the red peppers and some chopped garlic. Stir the ingredients while keeping the heat at a medium-high temperature. Now is the turn of the tomato paste and tomatoes. Putting the tomatoes is going to give to the ingredients moist, but if this does not happens, you can add a couple of spoon of hot water. Do not let the ingredient stick to the pan. Decrease the heat to a medium level.

The next step is to add the seasoning, so a little bit of salt (we can add more later), pepper, paprika and cumin. Make sure that before adding the seasoning there is som moist in the pan because if there is not, our spices will stick to the base and get bitter.

Now cover the sauce pan with a lid and let it cook covered for ten minutes. After this time passed, remove the cover for the next ten minutes or until when the Shakshuka is ready.

Add now the crumbled feta and mix for a minute or two.
Use a spoon to make some space and crack one egg over it. Do the same for the other eggs. Simmer the mixture 5 more minutes. You can cook the eggs a little more according to your own taste.

Once the dish is ready, remove from the heat, add some chopped parsley and crumbled feta before to serve.
