Step 1
In large zip lock bag, mix chicken, olive oil, and desired seasonings (optional: marinate 3-4 hours, or overnight)
Step 2
Bake chicken at 350° for 15-20 min, or until cooked through
Step 3
Cut the cooked chicken and simmer in fajita sauce with corn
Step 4
Boil broth
Step 5
Add minute Rice (1 cup rice to 1 cup broth/water). Remove from heat and cover, let stit 5 minutes, then fluff with fork
Step 6
Add lemon/lime juice and cilantro to rice and mix
Step 7
Add desired toppings
