Instructions
Step 1
Bring water to a boil
Step 2
Rub salt all over the chicken, inside the cavity also then rinse well

Add whole chickens to the pot

Char or Broil the Ginger & yellow Onions over flame to get a burn outside layer

Using a knife, lightly scrape the burn pieces off, rinse then add the ginger & onion to pot

Lightly toast the Pho spices on a stovetop in a pan on low heat for 5 minutes

Add toasted spices to a spice bag, tie securely, add to pot

Once water comes to a simmer, add 2 Tbsp of the Chicken Soup Base seasoning to the pot, along with the Rock Sugar

Remove the impurities by scooping out the foam

Cover with lid, reduce heat to low

Continue to simmer on gentle boil

Chicken should cook for at least 1 1/2 hour

Remove the chickens, let it cool for 5 minutes

Tear or shred the chicken then set it aside, discard bones

Taste the broth, adjust it to your taste

Add fish sauce, more salt, chicken soup base seasoning and rock sugar if needed until it suits your taste

Assemble your chicken pho bowl and enjoy with fresh herbs, lime and Beansprouts
