Spicy harissa, aubergine & chickpea soup

Harissa is a fragrant, spiced paste - if you don't like your food too spicy, add a sponge of fat-free Greek yogurt to the soup bowls as you serve.

Instructions
Step 1
Soften the onion in the oil in a large pan.
Step 2
Add the harissa and cook for 2 minutes, stirring.
Step 3
Add the aubergine and coat in the harissa.
Step 4
Add the chopped tomatoes, chickpeas and 500ml/18fl oz water.
Step 5
Bring to the boil and simmer for 30 minutes.
Step 6
Stir through the chopped coriander, season and serve.
