This is my friend’s recipe who grew up in Ukraine. There are a lot of optional additives that you can do or not do depending on what you have on hand.

Ingredients
6 servings

2beets
large, peeled and chopped in slivers or cubes

2potatoes
large, peeled and chopped in cubes

2carrots
long, peeled and chopped, OPTIONAL

0.5 headcabbage
shredded

0.5onion
peeled and sliced

3 clovesgarlic
peeled and chopped large
1 x 6 ozcan of garlic tomato paste
or~ 3tbsp ketchup

1 Tbspapple cider vinegar

2 Tbspgarlic powder

2 Tbspsalt

2 Tbspchicken seasoning
or 1 tbsp beef seasoning, I prefer chicken, optional - I forgot it when I made it for y'all lol

1can of butter beans
unopened, add at the end of cook time, OR 1-1 1/2 cups of uncooked white beans

3 Tbspketchup
or lemon juice
Instructions
Step 1
turn the instapot on. Once you chop everything you just add it on top of the beans and add water to above the veggies.
Step 2
1 cup dried mushrooms, or fresh mushrooms cooked separately, optional
Step 3
Place all ingredients in the instapot and fill water up to cover the added ingredients (you can add more, if desired). Turn pot to soup, 30-40 minutes.
Step 4
Seal (don't forget the ring) and let cook about 30 minutes.
Step 5
Once finished cooking, add the can of butter beans or mushrooms if you cooked them separately.
Step 6
Add sour cream (or McCormick lime mayo) and croutons to individual plates, as wanted.
