Instructions
Step 1
Mix all ingredients together.
Step 2
Ferment for 3 hours, turning every hour.
Step 3
Shape into two balls, place in oiled containers and either proof at room temp for 3 hours or in fridge overnight and up to two days.
Step 4
When ready to bake, pre-heat oven to 550F.
Step 5
If in fridge, remove 2 hours before baking.
Step 6
Place on a lightly floured surface and begin patting it in the center and gently pushing the dough outward, if feeling confident or frisky, do some tosses in the air! Spread to about 10 in diameter.

Place on a floured pizza peel or back of sheet pan.

Dress up your pizza with desired toppings, but not too much!
Step 9
Slide your pizza in the oven and bake for 12-15 minutes or until desired darkness! *Notes: if you cannot find bread flour, all purpose will work as well as a blend of 00 and ap/bread.

If this is your first time making pizza at home, I recommend using parchment paper on your peel or cookie sheet to avoid any possible sticking.
