Step 1
Prepare a flat dish filled with espresso, add sugar to taste.
Step 2
Whip the cream till ribbons form.
Step 3
In another bowl, whip the sugar and cheese together.
Step 4
Fold cheese into cream.
Step 5
Add tia maria to coffee mixture.
Step 6
Line a dish with a thin layer of cream mixture.
Step 7
Dip a ladyfinger into the espresso mixture till it is just about to give, remove and lay it in the dish sugar side down. Repeat till a layer is formed.
Step 8
Cover the fingers with a layer of cream mixture.
Step 9
Continue with as many layers as desired.
Step 10
Refrigerate for at least 3 hrs before serving with cocoa powder.
