Copycat Cheesy Enchilada

Based on my family's Hamburger Helper favorite. I experimented to recreate the flavors without the added sugar; some health swaps also reduced fats and added more nutrients. Red bell pepper and black beans added per box recommendations but can easily be left out for a more true to original feel. Recommend serving with tortillas, frito corn chips, or additional veggies for the health concious. Nearly as easy as the burger helper instructions and a similar amount of time to make.

Instructions
Step 1
Cook ground meat in tall skillet while breaking up into small pieces.
Step 2
Add all other ingredients except mexican blend cheese and stir to combine.
Step 3
Bring to simmer and cook covered 10 minutes or until excesses liquid has mostly cooked off. Stir occasionally to prevent sticking.
Step 4
Top with Mexican cheese and let melt.
