Step 1
Add boiling water to peas and let sit for a few minutes then drain and add ice cubes
Step 2
Mix ricotta, parmesan, lemon juice, chilli, salt and pepper and then put in the fridge to set
Step 3
Add peas, mint and olive oil to food processor until chunky then add mix to a bowl with chilli, parmesan, salt, pepper and olive oil
