Baked Turkish Zucchini Fritters with Garlicky Yogurt Dip

These zucchini fritters known as Mücver in Turkey, is an absolute summer delight. It’s light, easy to do, incredibly tasty and a great way to sneak in some vegetables in your diet. You can empty your fridge with this recipe, you can add any veggies that you would like, Sky is the limit. Mücver is generally shallow fried in oil but in order to make them less calorious I simply baked them in the oven. Mücver is best served with garlic yogurt. Instructions

For The Fritters

Start by preheating your oven at 200°C (390°F)

Grate the onion and zucchini to a pot and squeeze the liquid out of them. Then grate the carrot into the bowl. Then cut the corn kernels from the cob.

Finely chop the herbs and add them to the bowl.

Crack the eggs in the bowl then add the flour, spices and the olive oil. Then mix everything together with your hands.

Line a baking sheet with parchment paper and scoop your mixture to the pan with two spoons. To do this simply get a tablespoon full of mixture and with the second spoon simply slide the mixture to the pan. After putting it to the pan, flatten it with the back of the spoon. Do this until no mixture is left.

Bake them till they get brown to your liking.

For The Yogurt Dip

Step 7
Add your Yogurt to a deep bowl and add the paprika and the salt. After that microplane your garlic cloves.
