Tofu Laksa with Beans & Chinese Broccoli

Ingredients
4 servings
200 gmgreen beans
trimmed & halved
400 gmChinese broccoli
or other Asian greens, trimmed & cut into 5cm pieces
500 gmChinese noodles
200 gmbean spouts
150 gmtofu puffs
halved diagonally
baby sweetcorn
canned
1can water chestnuts
½ cupcoriander leaves
lime
to serve

Instructions

Step 1
Combine eschalots, garlic, ginger, lemongrass, coriander, chilli flakes & sambal oelek in food processor. Add 3 tblspn of vegetable oil & coriander stems & process to smooth paste.
Step 2
Heat remaining oil in pan & fry laksa paste over low heat for 15 minutes, stirring often to prevent burning.
Step 3
Add vegetable stock, curry leaves, curry powder, salt, sugar & coconut milk & simmer gently for 20 minutes. Taste & add more salt or sugar if needed.
Step 4
Meanwhile cook noodles following instructions, rinse.
Step 5
Add beans, Asian greens, baby sweetcorn & water chestnuts, & tofu puffs, cook for 3-5 minutes or until warmed through.
Step 6
Place noodles in bottom of deep soup bowls. Place mixture over the top & add more liquid to taste.
Step 7
Sprinkle with bean sprouts, coriander leaves & serve with lime cheeks on the side.
