Ingredients

1lemon zest
with peeler

1orange zest
with peeler, keep orange for cloves

4cinnamon sticks

1.5 "fresh ginger
thin but wide slices

100glight brown soft sugar

60mlport

60mlcherry brandy
or plum

dark rum

7cardamon pods
tap to open slightly

2 handfulsjuniper berries

2 handfulsblack peppercorns

maple syrup

1 ½ tspmixed spice

0.25star anise

nutmeg
freshly grated

2 bottlesred wine

200mlorange juice
Instructions
Step 1
Add everything to a heavy bottomed pan & mix well
Step 2
Put on a medium heat for 5-10min to dissolve the sugar & infuse the spices. Ensure it never starts to bubble as you'll be boiling off the alcohol!
Step 3
Lower the heat & allow the spices to infuse for 30 min. Careful not to allow it to boil.
Step 4
Allow to sit off the heat for 1hr to really infuse the flavours.
Step 5
Sieve & bottle (to gently reheat later) or return to a very low heat to serve from the pan.
