Step 1
Cook red (adzuki) beans until soft in water. The water should nearly be gone, add more if necessary. Add 1/4 cup sugar and lightly mash the beans. The total needed for the cake is one cup sweetened cooked beans.
Mix egg yolks, oil, water, and vanilla. Add 1 cup cooked red beans. Mix flours, baking powder, and salt. Combine the egg mixture with the flour mixture gently. Beat the egg whites with cream of tartar and sugar until soft peaks form. Fold one third of egg whites into the batter, until is loosened. Fold remaining egg whites into batter. Pour into a bundt or tube cake pan. Bake at 325 for 1 hour or until the cake springs back when touched lightly. Cool upside down, if possible, before slicing.
