Cheesecake Flan (Flan De Queso)

This Puerto Rican flan is made with cream cheese to get that super creamy and cheesecake-like texture. This is my favorite way to make flan, try it if you haven’t and you’ll never go back to regular flan!

Step 1
Preheat your oven to 325f and boil 2 cups of water in a pot for the waterbath later.

Make the caramel layer: Melt the sugar in a large pan over medium heat to make the caramel. Do not stir until most of the sugar has dissolved, and then you can stir until the caramel is a deep brown and it’s easy to pour. Divide between 12 4oz ramekins. If you don’t have ramekins, you can use two 6inch pans or a thick 9-10inch pan.
Step 3
Make the custard: In a blender, throw in all of the ingredients and blend well. You can sieve your mixture to get a smoother consistency.
Step 4
Place your prepared pans in a larger baking dish (I used a 9x13 Pyrex) and pour the custard over the caramel. Carefully pour the boiling water into the larger pan to create a water bath.
Step 5
Bake at 325f for about 40 minutes, but start checking at the 30min mark. The flan is done when the center is almost set but still has a jiggle. Do not over cook as the custard will curdle.
Step 6
Allow the flan to cool down to room temperature before chilling in the fridge for at least 4-6 hours. Enjoy!
