Instructions

Step 1
Start by making a fine paste of dates and walnuts.
Step 2
Add a pinch of saffron to some water and let it steep.
Step 3
In a large pot or Dutch oven, sauté the diced onions with some salt and turmeric until they turn translucent.
Step 4
Add the walnut paste and sauté until the walnut oils start to leach out.
Step 5
Add the pomegranate molasses and date paste to the pot and let it cook for a few minutes.
Step 6
Pour the water the pot. Season with salt and bring to a boil.
Step 7
Once boiling, reduce the heat and let it simmer for at least 2 hours. Stir occasionally and add more water if needed.
Step 8
With about 15 minutes left on the timer, season the chicken thighs with salt and pepper and sauté them in a separate pan until they get some color.
Step 9
Add the chicken to the stew along with the brown bits from the bottom of the pan. Cover the pot and let it simmer for another hour or until the chicken is cooked through and the stew is thick enough to coat the back of a spoon.
Step 10
Serve hot with rice or bread. Enjoy your Khoresh Fesenjan!

Garnish with chopped Parsley and Pomegranate
