Braised Chicken Gizzards with Onion Gravy

A classic way to cook chicken gizzards, braised with onion in a delicious gravy. Chicken gizzards are one of the healthiest portions of chicken, rich in protein, and are a high source of vitamins. It can be served with rice, mashed potato or pasta.

Instructions

Step 1
Wash gizzards very well under cold water, cut them in half, and cut off any fatty parts, if any, place gizzards, water, bay leaves, and 1/2 teaspoon salt in a saucepan, bring to a boil and cook halfway covered for 20 minutes, then drop gizzards in a colander and wash under cold water, let them get air dry until ready to use.
Step 2
In a heavy bottom pan, add oil over low heat add the onion and cook until tender for 10 minutes then turn the heat up and brown them for 2-3 minutes, add wine and cook onions until it evaporates.
Step 3
Sprinkle the flour all over the onions and mix to combine, slowly pour in the stock while mixing to avoid lumps, bring to a boil and let it simmer until the gravy is thickened to a desired consistency
Step 4
Add chicken broth, cook stirring occasionally until reduced by half, season with the salt, allspice & pepper to your taste, stir in the gizzards, fresh thyme, and braise for 20 to 30 minutes, stirring from time to time, leave the lid on for the first 10 minutes, taking it off for the rest of the time. (The sauce thickens as it cooks).
Step 5
Turn off the heat and garnish with chopped parsley. Enjoy with cooked rice, pasta or mashed potato.
