Instructions

Step 1
Preheat oven 200°c.
Step 2
Combine pizza sauce and tomato pesto in mixing bowl
Step 3
Beat 1 egg
Step 4
Combine breadcrumbs with salt, pepper and chicken coating mix
Step 5
Cut chicken breast fillet in halves (lengthwise). Dip chicken into egg, then into breadcrumbs mix to coat evenly.
Step 6
Place chicken onto oven proof dish. Spray or drizzle with olive oil.

Bake chicken for 15 - 20 minutes until golden and cooked
Step 8
Add pizza sauce and tomato pesto into heatproof jug, add 50ml of boiling water into mix and stir evenly. Let stand for 1 minute.
Step 9
Once chicken is cooked, add sauce mixture evenly over chicken, top with spinach leaves and cheese. Place dish back into oven for 5 - 10 minutes (until cheese has melted) - CAN BE SERVED WITH MIX VEGETABLES OR SALAD
