Marinate
Instructions
Step 1
Marinate the chicken with salt, pepper, lemon juice and choice of your seasoning. ( I used grill chicken seasoning), Cover the chicken keep it refrigerated for at least 4-6 hours.

Preheat the oven to 375° F

Step 3
Take a cast iron pan and add 3 tsp of olive oil. On the hot pan add fine chopped onions and garlic. Fry 5-6 minutes or until onions are translucent
Step 4
Now add the chopped cabbage fry for 2-3 minutes. Once the cabbage is softened, add tomato paste, diced potatoes, corn and white beans. Add one cup of water after mixing well.
Step 5
Add, salt and some hot sauce if you like extra kick
Step 6
Transfer the marinated chicken to the pan, make sure the chicken thighs are touching the bottom of the pan and are also not covered. Pour any leftover marinate mix into the pan
Step 7
Cover the pan and transfer to the oven for 40 min at 375°F. After 40 min take the cover and rest 5 min before serving. ( If you are using with skin chicken, then broil 5 min after taking the cover off to get crispy skin)
Step 8
Optional: Serve with sour cream
